I think it's maybe a little weird to stick to it as a permanent lifestyle, but it is good to cycle it out occasionally. It's good to give your digestive system a break from things like gluten, corn, and soy that are present in every bit of processed food that we eat every day. It's the little bits that can eventually build up to an intolerance. Obviously, like every "fix all" diet change, assholes take it too far.

Honestly, though (being a vegan myself), I find that if you don't know a restaurant specializes in your weirdo diet, you should probably cook at home or order a salad.

Also, as a cook, it's a fucking pain in the ass. I have groups of young women come in and they all order gluten free. It's statistically impossible, unless they're a Celiac support group for them to all be gluten. They do things like order BARLEY SALAD and then try to send it back when their friend tells them it has gluten. Gluten free breads and shit taste like shit, the only reason people eat them, is because they are Celiac, and if they don't, it will be bad for their health. It's a rare disease, one of out a hundred people suffer from it, yet all of a sudden, everyone is eating Gluten Free. People like this should not be allowed to eat outside of their own home, and personally, I know it's sick and cruel, but I hope they end up like Dr. Atkins - dead from their own stupidity. It's natural selection. The earth weeds out really stupid hippie fuckers by giving them a fad diet which will kill them. Incidentally there are strong ties between the Pro-Anorexia movement and this diet. Many people use it as a cover up for their anorexia. GROSS. FUCK ALL YOU PEOPLE.

I hope someone on here leads a gluten free diet but isn't Celiac so I can spend hours berating them and letting them know what a fucking idiot they are.

This is what the Dr. Guandalini, director of the Celiac Disease Center at the University of Chicago says about that:

?For the vast majority of Americans there?s no reason to avoid gluten.  A lot of people are on gluten free diets that don?t need to be.?

He doesn't say "it's a good thing to try every once in a while."

There is a thing called MODERATION. It's far more effective than fucking with your diet in potentially dangerous ways.

What a magical time we live in, in the last two years, after thousands upon thousands of years of human evolution, we get to experience the exact moment n our species history when something we've all eaten forever suddenly becomes poison to us if we don't cycle it out of our diet on occasion.

Also, unless you're making gluten free food yourself for when you cycle out, all that means is you're eating processed crap. I have colitis, and while there is no evidence that gluten does any damage whatsoever to anyone who is not allergic to gluten (very, very rare), I can tell you that processed foods are bad for your digestive tract, and for someone like me, they'll make me spew blood and hot, spicey razorblade-esque liquid lava out my ass for days.

Hear hear! Totally agree with you Kevin. I cook for a living and these people annoy the fuck out of me. Just another trend in dieting and looking for something to blame for stomach pain/fatness. If they were starving, they'd eat it; poor people aren't having a bunch of food neuroses, they eat what they can get.

My friend who has chronic Eczema says that the gluten free diet has pretty much gotten rid of his symptoms.  Dude used to get wicked rashes all over his hands and arms and shit and now doesn't.  Maybe there's something to that.  Doctors have made links between Eczema and Celiac's disease before, so.....

Cool. Some people have diseases that prevent them from eating processed food without getting sick, like me. Your friend had a disease that doesn't allow him to eat out without getting sick. If you have special dietary needs, eat at home. I never have never heard of raw foodists pulling this shit in restaurants.

 K., just be glad you do not live in Northern California.  I cannot fathom why it's hip to claim you suffer from a rare and unpleasant digestive problem, but it rank(le)s right up there with the backward fear of immunizations and cell-phone radiation.
  I know one person who actually has celiac disease, and it's a huge inconvenience.  He's a chef and worked for years to come up with replacement flours that have decent flavors and textures, and has made the only gluten-free pastries I've had that manage to avoid the flavor and texture of damp cardboard.

The general idea is that processed foods are awful for you, and if anything eating gluten free gives people the impetus to get themselves off of it. As I said, it's still a dick move to assume that someone can cater to your unusual diet. I don't doubt that probably quite a lot of the positive results people get from going gluten-free comes from halting their intake of highly processed foods.

As to going gluten-free being negative for your (non-social) health, as long as you're structuring your diet in a reasonable way I can't imagine why it would do much damage.

All that being said, I've actually been considering it, as gluten is apparently one of the three main dietary triggers (the other two being acidic meats and dairy) for psoriasis (which I have on my scalp, just recently discovered that it's not the worst case of dandruff ever). I'll be sure to order a salad if I ever come into your work, though.

I'm not entirely clear on at which exact moment this became a fad diet, but for those who are 100%-for-real celiac and have gone cold turkey since being diagnosed, even minimal gluten contamination can be a huge bummer. A turn-off-the-lights and wait until the headaches end bummer (could be hours, might be days).

Which is all the more reason, then, to put the burden of dietary safety on yourself rather than anyone else. I'm glad there's a wider range of options these days, but that wouldn't give me the right to chew someone out simply because they thought a piece of bread was non-lethal.

My health is my own business/problem --- I can't imagine why someone would willingly embrace the glutard thing and all the hassles associated with it if they could continue eating normal stuff with no serious consequences.    Simply because it's bad for me doesn't mean I want anyone else to share the symptoms or start sending food back.
